CEO and partner at GRO, Steffen Steen Kristensen, talks about the 600 m2 organic rooftop farm ØsterGRO where they grow vegetables and fruits, keep chickens, and drive the restaurant Gro Spiseri located at Østerbro in Copenhagen, DK.
It all started after a heavy downpour flooded Copenhagen in 2014 and the development of a Climate Resilience Neighbourhood began. Followed by this, the founders Kristian Skaarup, Livia Urban Swart Haaland, and Sofie Brincker saw an opportunity to create a green spot on the rooftop inspired by the rooftop farm Brooklyn Grange in New York, and because the roof was formerly used for car exhibitions the building had the ability to carry the heavy weight of soil and plants.
